"Mariniere" in French is associated with seafood in white wine and onion sauce. Imagine chopping fresh ingredients into large pieces and just use simple seasonings. By using black due to its clear and strong edges, thinly glazed edges make the black base clay seen through, and as a result, the overall appearance becomes tightened.
